TRADITIONAL FOOD OF THE NORTHERN SELKUPES
AND THE FORMATION OF A NEW ETHNICITY
The aim of the study was to describe the qualitative originality of the traditional food of the northern Selkups. On the basis of many sources, a retrospective review of the Selkup food menu was made, the methods of preparing original dishes were considered, the peculiarities of food extraction were noted and historical changes that had occurred in the Selkup diet over the past hundred years were revealed. The topic of traditional food, largely forgotten today, is in demand by modern Selkups who are going through the process of the formation of a new ethnicity, which emphasizes its relevance. As a result of the study, the following conclusions were drawn: the basis of the traditional diet of the Selkups was fish, meat, a product of the hunting industry, was not available to all Selkups and not always, its presence on the Selkup table depended on natural and socio-economic conditions. Plant food served as an addition to fish and meat. The Selkups bought flour and salt from the Russians, but used little because of their high cost and because of the remoteness of the places where they were sold. The Selkups ate fish and meat mostly raw. From the methods of food processing, the Selkups knew about cooking, roasting, baking, fermentation, freezing, drying and smoking.
